Adventure three: COWBOY STEW

Angela's Recipe: Cowboy Chili
















Ingredients:
1.5 lbs ground beef, browned and drained
6 med potatoes, washed and cubed
1 med onion, diced
2 cloves garlic, diced
1/2 green bell pepper, diced
1 can ranch style beans, slightly drained
1 can corn kernels, drained
2 cans tomatoes with green chilis
salt to taste
pepper to taste

Put it all in the crockpot on high 4-6 hours.

Review: Delicious, I loved it. I used 1 can medium and 1 can mild tomatoes with green chilis. Topped with cheese, which was awesome. 


Danielle's Recipe: Cowboy Casserole













Ingredients:

  • 1/2 cup chopped onion
  • 1 1/2 lbs ground chuck, browned and drained
  • 6 medium potatoes, sliced
  • 1 can red beans, drained
  • 1 can tomatoes and 1 can tomato soup
  • salt and pepper
  • garlic
  • can of green chilis
  • can of corn with juice
  • 1/2 cup water

Preparation:

Put chopped onion in the bottom of the slow cooker/Crock Pot; layer with browned ground beef, sliced potatoes, beans, green chili, corn. Dump tomatoes and soup over all. Mix in crock pot with salt, pepper and garlic as desired. Cover and cook on low for 7 to 9 hours. Serves 4 to 6.

COMMENTS:  Turned out ok, potatoes took a while to soften-probably WOULDN'T reccomend!
