Angela's Recipe: PUMPKIN COOKIES
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 1/2 cups white sugar
- 1 cup canned pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract

- 2 cups confectioners' sugar
- 3 tablespoons milk
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
- In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
- Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
- To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.
Review: cooked for 11 minutes at 350
did 1/3 batch with chocolate chips, 1/3 raisins, 1/3 plain- loved them plain the best, chad loved with choc chips. eh for raisins, added 1/2 t ginger, sprinkled more of all spices at the end, used a little more than1 c white sugar and 1/2 c brown
**delicious! super soft and pillowy and great with the frosting.
Danielle's Recipe: PUMPKIN BREAD
preheat oven to 350*
Sift together:
- 2 1/3 c. flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
Add to that:
- 2 c. sugar
- 3 eggs
- 1-15 oz. can pumpkin
- 2/3 c. vegetable oil
- 2/3 c. water
Divide mix into 5 small 1 lb. GREASED loaf pans
Bake 50-60 minutes until tooth pick comes out clean!
Topping:
- 2 tbs. melted butter
- 2 tbs. sugar
- 1/2 tsp. cinnamon
Mix thoroughly & brush over warm loaves
Review: Rated it an 8, needed some sweet crumbles on top or something to get to a 10.
